In a browser, at https://www.startpage.com, get to Settings. Either click https://www.startpage.com/do/settings, or click the Hamburger Menu button in the upper-right ☰ > Settings. Then scroll to the Appearance section, find Theme, choose Dark.

This is either saved as a cookie or in a settings link. I choose the cookie.
Firefox
In Firefox, get to General Settings. Either click on the Hamburger Menu in the upper-right ☰ > Settings or go to about:preferences#general
